ENTRIES • Mendoza´ trout paté: Trout quenelle into a shortcrust pastry ring, beet and spinach culis accompained by kumquats in spice syrup with fresh sorbet made of spicy citrics. • Crispy prawn with carrot and orange culis with red fruits and arugula. • Capelletti filled with mushrooms and orange, accompained by a fresh Apple sauce and aromatic greens. • Croquetts made of spinach and yamaní rice on a sweet beet, greens, with an apple , avocado and coriander cream. • Two core of mushrooms: Half sphere of portobello cheese, core of mushrooms with hydrated tomatoes in olive accompained by a champignon sauce. MAIN COURSE • Pork ribs in a malbec reduction accompained by sweet potatoes into an orange and honey sauce with mango syrup. • Beef on a crispy chimichurri, smash potatoes and quinoa salad with regional products. • Spiced Roulade made of regional goat, accompained by puff pastry with pineapple and asparagus chutney. • Trout in a fennel and melon sauce with spinach and potatoes terrina. • Gluten into a rice basket accompained by seasonal greens, candied cherrys tomatoes and spiced bulgur.
